Spicy Beef Soup with Herbs (Soup Nua Samoon Prai)
A spicy beef soup made with herbs, potatoes, tomatoes, lemongrass, kaffir lime leaves, celery, and bird’s eye chilies, seasoned with lime juice, fish sauce, and coriander leaves.

Instructions
- 1.
In a mortar, pound coriander roots, garlic, pepper, coriander seeds, galangal, lemongrass and Cumin until well blended. Set aside.
- 2.
In a pot, add the stock and bring to a boil; and then add paste, followed by the pounded ingredients, kaffir lime leaves, potatoes, tomatoes and chopped white onions. Add beef. Continue boiling until beef is cooked.

Add seasonings, sugar and fish sauce
- 4.
Add celery and bird’s eye chilies. Turn off the heat then add lime juice.
- 5.
Garnished with coriander leaves.
