Simple Tuna Patties

Instructions
1.
Roughly chop about 2 Tbsp of parsley and two green onions.
2.
Drain one 12 oz. can of chunk light tuna in water well.
3.
Add the drained tuna, parsley, and green onion to a bowl along with 1/2 cup plain breadcrumbs, 1 large egg, 2 Tbsp mayonnaise, 1.5 tsp lemon juice, and 1 tsp seasoning salt.

Mix the ingredients together just until evenly combined (don’t overmix). It is recommended to use your hands for this step.

Divide the patty mixture into four equal portions, then shape each portion into a patty.
6.
Heat a large skillet over medium heat. Once hot, add a couple of tablespoons of cooking oil and swirl to coat the surface.
7.
Add the tuna patties to the hot skillet.
8.
Cook the tuna patties for about five minutes on each side, or until deliciously golden brown.
9.
Serve with your favorite sides and some sauce (the recommended sauce is comeback sauce).

Notes
The seasoning of the tuna cakes can be customized with various seasoning blends available in your pantry.
Recommended serving suggestions include on a bed of greens, stuffed into a pita, or as mini cakes with a sauce for dipping as a party appetizer. Various sauce options include sriracha mayo, ranch dressing, yogurt dill sauce, or a squeeze of fresh lemon juice.
