Shaved Brussels Sprouts Salad

1.
Shave the Brussels sprouts and transfer them to a serving bowl.
2.
In a small mixing bowl, combine the Dijon mustard, honey, apple cider vinegar, olive oil, minced garlic, and salt. Whisk to combine.
3.
Add the craisins and crushed pecans to the serving bowl with the Brussels sprouts. Drizzle the dressing over the top of the salad.
4.
Toss everything together to combine, and add black pepper to taste.

This salad is perfect for meal prepping and can be made ahead, lasting in the fridge for up to 3-4 days.
If making ahead, fluff the salad and drain any excess liquid before serving.
Optional additions include diced kale, apples, bacon, other nuts, quinoa, or cheese.
