Pickled Chiles

This pickled chiles dish uses hot red chiles, garlic, vinegar, and salt to create a quick and simple topping or seasoning that can be ready in about 10 minutes.

    Combine all the ingredients in a small saucepan and bring to a brief simmer over high heat. Transfer to a heatproof container and place a folded paper towel over the top, soaking it to keep the chiles submerged. (The chiles may bump up above the surface of the liquid, but so long as the paper towel is soaked in brine and covers them, you’re good.) The chiles will be ready to use in about 5 minutes, or they can be transferred to a sealed container and stored in the refrigerator indefinitely.
