Phad Kra Praow Kai

A simple stir-fried chicken dish with garlic, bird’s eye chilies, hot basil, thai lime leaf, and a salty-sweet fish sauce and soy seasoning.

Instructions

  1. 1.

    In a mortar: pound garlic with bird’s eye chillies into a rough paste.

  2. 2.

    In a wok on a medium heat: add vegetable oil and the paste from the mortar. Stir-fry until an aroma develops.

  3. 3.

    Add the chicken, followed by long beans, baby corn, big chillies and chicken stock. Then add seasonings.

  4. 4.

    Add the kaffir lime leaves, green peppercorns and cook well.

  5. 5.

    Sprinkle hot basil and turn off the heat.

  6. 6.

    Transfer to a serving dish and garnish with deep-fried hot basil.
