Oatcakes
These oatcakes are made with rolled oats, spelt flour, flax seeds, walnuts, coconut oil, butter, maple syrup, sugar, and eggs. They’re simple baked treats, perfect for breakfast or as a snack.

Instructions
- 1.
Combine dry ingredients, oats flour, baking soda, flax seeds, and walnuts in a bowl.
- 2.
Over low heat, melt coconut oil, butter, maple syrup and sugar until dissolved.
- 3.
Pour wet ingredients over dry and mix until moistened. Add beaten egg and mix until just combined. Do not overmix.
- 4.
Divide mixture evenly among the 12 cups in the muffin pan, filling each one nearly to the top.
- 5.
Bake at 350 degrees for 25-30 minutes until edges of oatcakes are golden brown
