Instructions

  1. 1.

Set a rack in the middle of your oven and preheat to 450°F.

  2. 2.

In a large bowl, mix the flour, baking soda, and salt until fully incorporated.

  3. 3.

Form a well in the center of the flour mixture and fill it with the buttermilk.

  4. 4.

Use a fork to gradually incorporate the flour into the buttermilk until a thick batter forms.

  5. 5.

Use your hands to gently shape the batter into a dough, incorporating any remaining flour. Do not overwork the dough.

  6. 6.

Transfer the dough to a floured work surface and shape it into a round, approximately 6 inches in diameter and about 1.5 inches thick.

  7. 7.

Place the shaped dough in a Dutch oven or cast iron skillet.

  8. 8.

Use a sharp knife to cut a large 'X' into the top of the dough.

  9. 9.

Bake for 10 minutes at 450°F, then lower the oven temperature to 400°F and continue baking for an additional 20 minutes until the bread is golden brown and crusty on the outside.

Transfer to a rack to cool before serving.
