Cheese Sauce
A simple cheese sauce made with whole milk, sodium citrate, and shredded cheese like cheddar or Colby jack.

Heat milk in a sauce pot with citric acid and baking soda. It will foam fairly heavily due to the chemical reaction between the acid and soda, it will settle as it heats up. Heat until about 190-200F
- 2.
Turn off heat and begin to stir in cheese on small handful at a time, whisking until the cheese has fully melted. Repeat the process until all the cheese is incorporated. If the sauce begins to look clumpy, turn on a low flame under the pan to help incorporate the melted cheese. Salt to taste.
